I have a confession.
I LOVE Jack in the Box Tacos.
I don’t get to eat them anymore, but they were definitely a part of my childhood. It was an easy and inexpensive meal option for nights after all our extracurricular activities. Healthy: NO. Delicious: YES.
The other day I had a craving for them and just had to figure out how to make them at home. I tried, and I’m not going to lie.. they were amazing. I was only sad that we ran out so quickly. Please, try these. Even if you don’t like Jack in the Box tacos.. these are worth it.
Ingredients
1 lb ground bison (or ground beef)
1 cup cold water
2 tablespoons tomato paste
1 tablespoon chili powder
2 tablespoons masa flour
2 teaspoons salt
1 teaspoon garlic powder
3/4 teaspoon soy sauce
1 tsp cholula
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
street taco corn tortillas
american cheese; cut into triangles
shredeed lettuce
oil for frying
DIRECTIONS
Cook your ground bison (or beef). Try to break it down into small pieces. Drain off oil. In a small bowl, combine your remaining ingredients (Up to corn tortillas) and mix together. Add into your ground bison and let it cook for another 5 minutes.
Optional Step: once it is cooked, you can break it down further by placing in a food processor and pureeing.
Heat up your tortillas to make pliable and add 3-4 tablespoons of meat. Fold in half and place on a baking sheet. Cover with plastic wrap and refrigerate (or freeze) for several hours.
COOKING
Heat up a pan with 2 inches of oil inside to 350 degrees. Add tacos one at a time, holding them shut with tongs to keep them sealed. Cook for 3-4 minutes, until the tortillas are crispy. Drain on a baking rack. Pry them open slightly and add in the triangle of cheese and your shredded lettuce. I added another few drops of cholula as well. Enjoy warm!
