Flourless Blondies

I suppose this quarantine is good for a few things:

Spending quality time with the kids

Having to actually cook

The time to work on this blog, that has been so dearly neglected.

With the lack of being able to go to the grocery store on a daily basis, I’ve been working with what is available in my home. Squeezing some veggies in is also key so my kids don’t know what hit them. Next time, I’m going to add in unsweetened coconut flakes!

This is a super easy recipe, and good for the kids to help with!

INGREDIENTS

1 cup peanut butter (can substitute with almond or a nut butter)

1 egg

1/2 tsp baking soda

1/2 cup sugar (I used coconut sugar)

1 tsp vanilla

1 cup zucchini; shredded

1/2 cup mini chocolate chips (optional)

DIRECTIONS

  1. Preheat your oven to 350 degrees. Oil an 8×8 pan and line with parchment paper so the blondies are easy to remove.
  2. You will want to start by grating your zucchini and placing in a strainer to remove as much water as possible. You can also place in a clean towel and wring it out.
  3. Mix together your peanut butter, egg, vanilla, and baking soda.
  4. Add in your zucchini and chocolate chips.
  5. Bake for 30 minutes or until a toothpick comes out clean
