I always use to be a serious dessert lover. Especially anything chocolate. Over the past few years I’ve sort of stopped enjoying chocolate in the same capacity. However, when that hankering for something chocolate kicks in, I’m desperate to find something to satisfy.
Sometimes I’ll make a molten cake since it is easy to make for two people and it is definitely an easy recipe with few ingredients. I do sometimes find them a little dry though, and they don’t stay good for much past that day. So yesterday, Mother’s day, this chocolate craving hit and I needed to find something sort of quick and easy to make. I spent a little time researching gooey chocolate cakes, and came across a Kladdkaka. It is a Swedish chocolate cake sort of similar to a brownie. It has a lovely crackly top while having an almost underbaked, gooey filling. I always prefer my brownies a little under baked, so this recipe seemed my speed. The other fantastic part is that there are only 6 ingredients and bakes in about 20 minutes. All I can say is that this dessert did not disappoint. I highly recommend everyone makes this dessert, even if you can’t pronounce it (I can’t..).
Ingredients
10 tablespoons unsalted butter
1/2 cup cocoa powder
1 3/4 cups sugar
1 scant cup of flour
1 teaspoon vanilla
3 eggs
Directions:
Preheat oven to 350 degrees.
Melt your butter and then let it cool. In a bowl, mix together your cocoa powder, sugar and flour. Mix together your vanilla eggs and butter, then add to your dry ingredients. Mix well. It should look like a thick brownie.
I found a springform pan to work best so that the Kladdkaka could easily be removed. Remember, it is quite gooey in the middle. Butter your springform pan and pour your cake batter into it. Bake for about 25 minutes. Let cool for a few minutes and serve warm!
For presentation, you could dust cocoa powder or confectioners sugar to the top and serve with a nice scoop of ice cream or whipped cream.
